Lavender Berry Syrup

250ml water
250g sugar
250g wild blueberries
1 tbsp culinary lavender
METHOD. Combine all the ingredients in a saucepan over medium heat. Stir until the sugar dissolves. Let the mixture simmer and bubble until the blueberries burst. Let the mixture cool completely then pour it through a fine strainer to remove the lavender and burst blueberries. Store this sealed in the fridge for about a week.
Lavender Berry Fizz

2 tbsp Lavender Berry Syrup
50ml vodka
Ice
Club soda
Fresh blueberries (garnish)
Fresh lavender (garnish)
METHOD. In a glass, add the Lavender Berry Syrup, vodka and ice, and stir well. Top the rest of the glass with club soda and garnish with fresh blueberries and lavender. Cheers!
